Baked eggplant

Baked Eggplant is here to tantalize your taste buds. This Baked eggplant is one tempting dish which can make your meal really exciting.and fulfilling. Baked eggplant has been our family favorite however this one is little different as this is made with healthy white sauce.

Infact the sauce is made out of bottlegourd which is healthy and saucy and at the same time has the creamy texture just required for the Baked Eggplant.This sauce used in Baked Eggplant happens to be healthy and low on calorie and thus is guilt free. Infact the same sauce can be used with pasta too. Another reason why I love this recipe because even before your kids would know about bottle gourd they would be relishing the taste of Baked Eggplant.

When the first time I thought of Baked Eggplant and making it healthy , I wasn't sure about using bottle gourd but then I gave a try.Baked Eggplant with bottlegourd turned out to be great and was yummy to the core. Served it with some garlic bread and tomato soup and was a hit for sure.

Ingredients
  1. Bottle gourd: 2 cup cubed
  2. Garlic: 6 cloves roasted
  3. Milk: 2 cups
  4. Salt: as per taste
  5. Red chilli powder: 1tsp
  6. Oregano:1 tsp
  7. Basil: 1/2tsp
  8. Black pepper:1 tsp
  9. Chilli flakes: ½ tsp
  10. Brinjal :1
  11. Onions: 1 chopped
  12. Tomato: 1
  13. Olive Oil: 1 tsp
  14. Processed cheese: 1 tbsp
Instructions
  1. Boil bottlegourd in 3 cups of water for some 10 mins and then make its puree with roasted garlic.
  2. Now pour this puree in a pan and add milk and cook to make a smooth sauce.
  3. Add all the seasonings like salt, black pepper, basil, oregano, red chilli powder and chilli flakes and keep it aside.
  4. Now cut ½ inch slices of eggplant and thin slices of tomato.
  5. Add some oil in a pan and add some chopped garlic and onions.
  6. Sprinkle some salt on the brinjal slices and let it stand for 2-3 mins and then wipe it and put to on the pan is cook for 5 mins.
  7. Once Brinjal pieces are ¾ cooked put off the stove.
  8. Take a baking tray and pour some bottle gourd sauce and then place a layer if brinjal pieces – sauce -tomatoes –sauce and brinjal.
  9. Now cover it with sauce and last layer of tomato and grated cheese and some seasonings.
  10. Bake this on 180 degree C for 20 mins and serve it with toasted garlic bread.
