Basil Pesto Pasta..and I just loved it. Yes the pesto is from the scratch and I limited my cheese content but if you arn't that worried about it, please be generous with cheese.

So for long I tried finding the substitute of pine nuts which is mostly used in pesto and then Pistachio came to my rescue. Infact it tasted better, however I later realized that almonds too could have done a good job for Basil Pesto Pasta.The Basil Pesto Pasta had good and balanced flavors of Basil, pungency of chilli and texture of cream. I loved the Basil Pesto Pasta so much that next day made sandwiches out of it too.

Ingredients
  1. Pistachio: 1 cup blanced
  2. Garlic: 2 cloves
  3. Olive oil: 1 tbsp
  4. Basil leaves: ½ cup
  5. Parmesan cheese: 2 tbsp
  6. Salt: to taste
  7. Black pepper: as per taste
  8. Pasta: 1 cup
Instructions
  1. Boil water and add pasta and cook till al dente.
  2. Make a paste of blanced pistachio, garlic, olive oil, salt, basil leaves and parmesan.
  3. Add this paste to boiled pasta and then season it black pepper and parmesan cheese and serve hot with garlic bread.
