Beetroot PulavBeetroot Pulav is another lunch-favorite of mine and I keep making this every once in a while. Infact Beetroot Pulav has been my husband's favorite too. I remember some years back when our family doctor suggested him to include beetroot in his diet and I was clueless from such amazing recipes. I wish I had know this Beetroot Pulav recipe than and made food yummier for all of us.

Ingredients
  1. Rice: 1 cup
  2. Boiled Beetroot: 1 cup diced
  3. Onion: 1 chopped
  4. Ginger garlic paste: 1 tbsp
  5. Bay leaf:1
  6. Cardamom: 2
  7. Cinnamon:1
  8. Cloves: 2
  9. Boiled green peas: 1/2 cup
  10. Cumin seeds:1/4 tsp
  11. Black pepper corns:4
  12. Cumin powder:1/2 tsp
  13. Garam masala:1/2 tsp
  14. Lemon juice: 1 tbsp
  15. Red chilli powder:1/2 tsp
  16. Salt:to taste
  17. Oil: 1 tsp
Instructions
  1. Heat oil in a wok and add cumin seeds to splutter and add bay leaf, cardamom, cinnamon, black pepper corns and cloves.
  2. Add onions and saute for a min before adding ginger garlic paste and cook for a minute.
  3. Now add peas and beetroot and cook with some salt.
  4. Add seasonings like red chilli, cumin powder and garam masala and cook for a minute.
  5. Now add rice and pour 1&1/2 cups water and let it cook covered till rice is done and has soaked all the water.
  6. This would take 5-7 minutes and after this add lemon juice and serve steaming hot with raita.
