Brinjal Kadhi

Brinjal Kadhi ..doesn't it sound interesting?

Well one fine day I had Brinjals lying in the fridge and then came Brinjal Kadhi. It was an accidental dish but more of a compulsive dish. Because that day I had nothing more than Brinjals.

However this Brinjal Kadhi was healthy because I replaced deep fried brinjals with baked and grilled pieces.Infact if you aren't too conscious you can go the deep fried way for Brinjal Kadhi. Brinjal Kadhi gives a new flavour to the normal kadhi and that itself makes the dish worth trying. I kept my Brinjal Kadhi less spicy but you can make it as spicy as possible.

Ingredients
  1. Brinjal : 4 small slit in half
  2. Gram flour : 2 tbsp
  3. Sour Curd: 1 cup
  4. Oil: 1/2 tbsp
  5. Asafoetida: 1/2 tsp
  6. Cumin seeds: 1 tsp
  7. Curry leaves: 6-7
  8. Garlic: 1 tbsp chopped
  9. Onions: 1 chopped
  10. Coriander leaves: 1 tbsp chopped
  11. Red chilli powder: 1 tsp
  12. Cumin Powder: 1 tsp
  13. Turmeric: 1 tsp
  14. Salt: as per taste
  15. Mustard seeds: 1/2 tsp
Instructions
  1. Dust turmeric, salt, cumin powder and red chilli powder on brinjals and keep them aside for 10 mins.
  2. Now bake them on 180 degree C for 20 mins and grill for 5 mins.
  3. Heat oil in pan and temper it with cumin seeds, mustard seeds , garlic and curry leaves.
  4. One this starts spluttering, saute onions till light brown.
  5. Now mix curd, 2 cups water and yoghurt and pour it in the wok and bring it to boil.
  6. Add cumin powder, turmeric, salt and cook for 2-3 mins.
  7. Now add the baked brinjals and cook it covered for 2-3 mins more before adding coriander leaves and serving it hot with roti and rice.
