Egg Idli

Egg Idli is one quick fix recipe I found in one of my old cook books and then tried it for one of the lunches.Infact when I first read the recipe of Egg Idli, I wasn't sure myself. But still went ahead with the recipe. However this Egg Idli turned out to be good enough one pot meal.

Infact though Idli and egg don't go together but Egg Idli was a great combination and it had the combination of spices, nutrition and taste.So my husband was at first zapped to even hear the name of Egg Idli but when he tasted he gave me a green signal without much effort. So after all the apprehensions once I cleared the litmus test the recipe of Egg Idli was a hit.

After my first try with Egg Idli , I repeated it many times and then it became a regular breakfast option for our family and here we go for a quick recipe of Egg Idli.

Ingredients
  1. Idli: 6-7 cut in quarters
  2. Onions: 1 chopped
  3. Ginger: 1 tbsp chopped
  4. Garlic: 1 tbsp chopped
  5. Green chillis: 1 chopped
  6. Tomato: 1 deseeded and chopped
  7. Tomato Ketchup: 1 tbsp
  8. Black pepper powder: 1 tsp
  9. Red chilli powder: 1/2tsp
  10. Garam masala: ½ tsp
  11. Lemon Juice: 1 tsp
  12. Salt: as per taste
  13. Oil: 1 tbsp
Instructions
  1. Heat oil and sauté onions and then green chilli, ginger and garlic and cook for two mins.
  2. Add chopped capsicum and cook for a minute and then mix tomatoes.
  3. Sauté for a min more and add salt, red pepper and then break one egg in it.
  4. Now cook this till it becomes granular and at this stage add quartered idlis and mix it well.
  5. Add lemon juice and ketchup and serve hot with fresh coriander garnish.
