Paneer and Mushroom SandwichPaneer and Mushroom sandwich is one of my family's most loved breakfast . They love it for the juicy grilled veggies and I get to make them eat mushrooms which they are not very fond of. Infact sometimes its very difficult to stop them from having the grilled stuffing itself like snacks and that's when I have fix my Paneer and Mushroom sandwich in a hush hush. Well so this time I made this Paneer and Mushroom sandwich as night for dinner and hence the pictures too are not very bright. However if you have trusted my past recipes, this Paneer and Mushroom sandwich is a must try.

Unlike many of my recipes this one takes little more like 25 mins considering the marination etc. However skipping marination is not a good idea for the taste it will gives your Paneer and Mushroom sandwich. So if you are in real hurry then just do the mushroom bit and use it as a filler , but for a weekend just try this full recipe and enjoy the taste of Paneer and Mushroom sandwich for breakfast or brunch.

Ingredients
  1. Bread slices: 4
  2. Mushroom: 1 cup finely chopped
  3. Bell pepper: 1/2 cup finely chopped
  4. Paneer: 200 gms cut in fingers (10 pieces)
  5. Garlic powder: 1/2 tsp
  6. Oregano: 1/2 tsp
  7. Black pepper: 1/2 tsp
  8. Red chilli powder:1/2 tsp
  9. Hung Curd: 1 cup
  10. Ginger Garlic Paste: 1 tbsp
  11. Salt: to taste
  12. Lemon juice: 1/2 tsp
  13. Cumin powder: 1/2 tsp
  14. Tomato: 1 cut in slices
  15. Coriander: 1 tbsp finely chopped
  16. Oil: 1 tbsp
  17. Cheese: 1 tbsp grated
  18. Milk: 2 tbsp
  19. Tomato sauce
  20. Green Chutney: 2 tbsp
Instructions
  1. Mix ginger-garlic paste in hung curd with some salt, red chilli powder, coriander, lemon juice, cumin powder and add paneer pieces and tomato slices to marinate.
  2. Heat oil in a pan and add mushroom with some garlic powder and cook for 2-3 mins and later add bell pepper and cook till its dried.
  3. Add salt , black pepper, tomato sauce and cheese and cook for 2-3 mins.
  4. Add little milk to give it a creamy consistency and after a min let the mixture cool down.
  5. Once the marination is done of say 30 mins grill the paneer and tomato slice and keep is aside.
  6. Take a slice and spread chutney on it and then first put the layer of mushroom and bell pepper.
  7. Now top it up with one tomato slice and paneer grilled fingers and close it with the other slice.
  8. Now grill the sandwich on a pan or use sandwich maker and serve hot with some fresh juice.
