Pumpkin Raita

My dinner table is incomplete without raita and one of these days,  I tried this super easy and full of goodness Pumpkin Raita. Infact like many other trials, I wasn't sure of the outcome but once my son approved it , I knew I've cracked this one. So Pumpkin Raita came in my mind when I saw a pumpkin in the refrigerator and wanted to use it in a non oily recipe. Stuck to me to boil it and use it for Pumpkin Raita.

Infact when served for dinner my husband couldn't make out that it was pumpkin apart from that it had little more chilli than he usually prefers. So minus hot chilli the taste of Pumpkin Raita was upto the mark.However I would still add chilli because it gives a contrasting  taste to sweet Pumpkin Raita and adds to the flavor too.

Ingredients
  1. Grated Pumpkin: 1 cup
  2. Mint leaves: ¼ cup chopped
  3. Green chilli: chopped
  4. Yoghurt: 2 cups
  5. Curry leaves: 5
  6. Black salt: as per taste
  7. Red chilli powder: ½ tsp
  8. Cumin powder: ½ tsp
  9. Cumin seeds: 1 tsp
  10. Oil: ½ tsp
Instructions
  1. Mix cumin powder, red chilli powder and salt and keep aside.
  2. Boil the grated pumpkin for 5 mins and then strain it out.
  3. Heat oil and then add cumin seeds, curry leaves and then sauté pumpkin with mint leaves for just 2 mins.
  4. Now add this to the yoghurt mixture and serve chilled
