Sarso Saag

Sarso ka Saag is one amazing food from up north. You wouldn't find anyone who would have tasted this indian delicacy or would have not craved for this Sarso ka Saag. Sarso ka Saag is one of the favorites from Punjab and goes well with Makke ki roti.Infact I remember as a kid we would all wait winters so we could have Sarso ka Saag to our full. Infact we had different combinations to have Sarso ka Saag, while some had roti others preffered parathas and my personal choice use to be jaggery.

Sarso ka Saag is actually made with different leafy vegetables apart from Sarso and that just adds to the taste.Adding butter to this yummy Sarso ka Saag just makes the whole experience heavenly.

Ingredients
  1. Mustard leaves 4 bunches
  2. Spinach leaves 1 bunch
  3. Bathua 1 bunch
  4. Oil: 1 tbsp
  5. Ginger : 2 tbsp chopped
  6. Garlic : chopped 6-8 cloves
  7. Onions : 2 chopped
  8. Green chillies : 1 chopped
  9. Salt to taste
  10. Cumin seeds: 1 tbsp
  11. Ghee: 1 tbsp
  12. Red chilli whole: 2
  13. Tomato: 1 chopped
  14. Lemon: 1 tbsp
  15. Corn Meal: 1 tbsp
  16. Red chilli powder: ½ tsp
  17. Bay leaf:1
  18. Cinnamon: 1
  19. Asafoetida: 1/2 tsp
Instructions
  1. Wash all the leafy vegetables and pressure cook them with 1 chopped onion, green chilli, ginger, garlic and 1 tomato.
  2. Now make a paste of this along with some corn meal and keep it aside.
  3. In a pan pour some ghee and let cumin seeds splutter and then add red chillis.
  4. Saute some chopped onions and add the boiled green paste in the tempering.
  5. Cook it on slow for 10 to 15 mins before serving with some white butter and hot makka rotis
