Sukhi Sevaiyan

First time I had these Sukhi Sevaiyan , I was in 5th grade and it was at our neighbor, Zaidi aunty's place when we had gone for a Eid Party. Still remember how delicious they were and how I skipped everything else to just fill myself up with those yummy Sukhi Sevaiyan.However my mom wouldn't make those Sukhi Sevaiyan and I had to wait for my next Eid party at Zaidi aunty's place.

Ironically, I never got a chance to visit her again and neither taste those scrumptious Sukhi Sevaiyan. Infact every time  a friend would get me Sevaiyan from their Eid celebrations I landed up having the ones cooked with milk and not the Sukhi Sevaiyan , I have been craving for. So this time I thought of trying and treating myself with my home cooked Sukhi Sevaiyan. Did a quick search and went through some good you tube videos to see which one would be closer to the taste I have been on my mind. Sukhi Sevaiyan is also called Sevaiyan ka Zarda and that name adds to the glamour of the dish.

Without saying the recipe was a hit and it gave me almost what I wanted. And if this wasn't enough my family loved it as much as I did and now I have  more Sukhi Sevaiyan lovers at my place. So let me cut the story here and take you to the recipe of Sukhi Sevaiyan so you too can relish this beautiful creation out of humble vermicelli.

Ingredients
  1. Vermicelli: 1 cup
  2. Sugar: 3/4 cup
  3. Ghee: 2 tbsp
  4. Cardamom powder: 1 tsp
  5. Cashew: 10
  6. Raisins: 10-15
  7. Almonds: 10 sliced
  8. Water: 1 1/3 cups
Instructions
  1. Saute raisin and cashews in 1/2 tsp ghee and keep aside.
  2. Now pour rest of ghee and saute vermicelli till its brown for some 5 mins on a medium flame.
  3. Add sugar and cardamom powder and mix it well.
  4. Pour water and all the dry fruits and cook it covered till vermicelli soaks all the water.
  5. As water evaporates keep mixing it as gradually it will get a nice glaze.
  6. Now let it cool and garnish and serve to your guests.
