Vegetable Boondi Raita, yes you heard it right!!

Let go the simple boondi raita with a little more interesting version and offcourse addition of some nutrition to your humble raita, which I am sure you wouldn't mind at all.My family is fond of boondi raita and needless to say, I find it easy to make one. But this time, I tried to make it differently and that is when it became Vegetable Boondi Raita. The soft boondis in the Vegetable Boondi Raita get added bites of vegetables and that just makes the whole meal more tasty. I mostly skip salads when I add these vegetables in the raita and that's also a time saver for me. Talk about quick fixes here.

Addition of green chutney gives nice flavor and texture to the Vegetable Boondi Raita, however its purely optional as beetroot will anyways give it a pinkish color. So next time you have to try out something easy don't miss on Vegetable Boondi Raita.

Ingredients
  1. Curd: 1 &1/2 cup
  2. Boiled Beetroot: Thick grated 2 tbsp
  3. Boondi: 2 tbsp
  4. Carrots: 2 tbsp grated
  5. Cabbage: 2 tbsp grated (optional)
  6. Onions: 2 tbsp thin sliced and seperated
  7. Black salt: as per taste
  8. Cumin powder: 1 tsp
  9. Red chilli powder: 1/2 tsp
  10. Green Chutney: 1/2 tsp
Instructions
  1. Mix all the grated vegetable together and keep aside.
  2. Beat the curd till smooth and add cumin powder, salt and red chilli powder.
  3. Now add the vegetables and then the boondi.
  4. Add the green chutney at the end to give little flavour and some more contrasting color to your raita.
